Ingredients
- 2 cups plain flour
- 1 cup castor sugar
- 1/2 tsp bicarbonate of soda
- 1 tsp cinnamon
- pinch salt
- 1 heaped tbsp ground ginger
- 125g butter
- 1 large egg
- 2 tsp golden syrup
Method
- Preheat oven to 180°C.
- Mix flour, sugar, bicarb, spices, and salt in a large bowl.
- Rub in butter until mixture has a very fine, crumb consistency.
- Beat in egg and golden syrup.
- Work into a firm dough.
- Roll teaspoonfuls of mixture into small balls, place on trays 5cm apart.
- Bake in the oven for 15 minutes.
